Many of our beers are brewed using the 4 basic ingredients that constitute the German Purity Law (Reinheitsgebot 1516 Bavarian law): water, grain, yeast and hops.

Some of our specialty beers break the above law and contain added ingredients for extra and unique flavor components.

All of our beers are hand-crafted using only the freshest and highest quality ingredients, thus making our beers exceptionally fresh,clean, pure and absolutely delicious.

 

This style of beer is classified as an Imperial Oatmeal Stout. The focus is on the alcohol percent and the oats added to the mash during the brewing process. The oats add an incredible smoothness to the mouth feel and just a touch of sweetness to its body. Our version is a full body beer with a roasted flavor and creamy smooth mouth feel that conceals the alcohol content of 8.2 %.

50 IBU / 8.2 ABV

 

This style of beer is classified as an India-Style Black Ale. The focus is on both the malts and hops used during the brewing process. Our version is a medium body beer with a strong dark roasted malt flavor that finishes with an assertive hop bitterness. The aroma is roasty/citrus.

65 IBU / 7.4 ABV

 

This style of beer is classified in the "Fruit Beer" category. The focus is obviously on the fruit used in the brewing process. We used an over-whelming amount of blueberries for a true blueberry flavor.

The graphic for this label was Designed by: ANTHONY THOMASON - He was the winner of our Blueberry Ale Label Design Contest which ran during the summer of 2010.

18 IBU / 6.5 ABV

 

This style of beer is classified as an American Red Ale. The focus is on the malts used during the brewing process. The aroma is as mildly sweet as the taste.

32 IBU / 7.0 ABV

 

This style of beer is classified as an "Cream Ale". The focus is on the malts used during the brewing process. The taste is extremely mild, sweet and refreshing.

22 IBU / 7.2 ABV

 

This style of beer is classified in the "American Porter" category. The focus is obviously on the very dark roasted malts used in the brewing process to impart a "chocolaty flavor". Our version includes the addition of cocoa powder to intensify the taste of chocolate. This is our Valentine's Special.

21 IBU / 7.0 ABV

 

This style of beer is classified in the "American Porter" category. The focus is obviously on the very dark roasted malts used in the brewing process to impart a "chocolaty flavor". Our version includes the addition of cocoa powder to intensify the taste of chocolate and all natural peanut butter.

20.9 IBU / 7.6 ABV

 

This style of beer is classified in the "Belgian" category. The focus is obviously on the yeast used during the brewing process. Our version has added orange peel to emphasize the fruity taste and aroma derived from the yeast.

24 IBU / 7.0 ABV

 

 

This style of beer is classified as an 'American' Barley Wine. The focus for this beer is its ABV, which typically ranges between 8-15%. Although the name implies that it is a 'wine' it is still a beer and a very strong and intense one at that. The American version tends to be heavily hopped in an attempt to balance the heavy sweet nature of this beer.

Our focus was on both the malts and hops used during the brewing process. We chose to use double the amount of grain needed to provide the high ABV (we will never use adjuncts to lighten our grain bill - no sugars added). Thus our Barley Wine has a very rich, intense, and heavy body, the aroma and flavor of rye grain is very prominent . Our version is also very heavily hopped with a finishing IBU of 130 before barreling, thus balancing the sweetness of the body.

Our Barley Wine is aged in Bourbon Barrels for 6 full months, thus imparting even more flavor to this very complex beer.

130 IBU (before barreling) / 12% ABV

 

This style of beer is classified as an American Pale Ale or APA. The focus is on the hops used during the brewing process. It has a floral aroma and the taste is "hops-infused" with firm bitterness.

41 IBU / 6.6 ABV

 

This style of beer is classified as an unfiltered German style wheat beer. Hefe meaning yeast and weizen meaning wheat in German. The focus is on both the malts and yeast used during the brewing process. Our version is a medium body beer brewed with 60% malted wheat. The aroma and flavor, derived from the yeast, is fruity and spicy resembling that of banana and clove. A very refreshing beer on hot and humid summer days.

15.0 IBU / 5.6 ABV

 

This style of beer is classified in the "Fruit/Vegetable" category as a "Chili beer". The focus is obviously on the chili peppers used during the brewing process. Our version uses a mix of hot peppers, including jalapenos and anaheims (hence the name...Hot-Jala- Heim). It has a delightful 'peppery' aroma as well as taste with a 'mild' sensation of heat experienced after swallowing.

19.2 IBU / 7.2 ABV

 

This style of beer is classified in the "American India Pale Ale" category. The focus is obviously on the hops used during the brewing process. Our version has a citrus/fruity aroma with a big citrus taste and bitter hop finish.

91 IBU / 8.8 ABV

 

This style of beer is classified as an American Wheat Ale, not to be confused with the German unfiltered version - Hefe Weizen. The focus is on the wheat used during the brewing process. Our version is filtered and slightly "off the beaten path" with a dry "hoppy" finish.

18 IBU / 6.8 ABV

 

This style of beer is classified in the "California Common" category. The focus is on the special lager yeast brewed at a warmer ale temperature, thus creating a medium bodied malty beer with an assertive hop presence. Our version of this beer honors the Lackawanna Railroad which put our Chemung Canal out of business. This beer is also perfect for the hot and humid days of summer.

26 IBU / 6.4 ABV

 

This style of beer is classified in the "Specialty Beer" category. The focus is obviously on the Maple Syrup used in the brewing process. Our version uses local 100% pure Maple Syrup in ample quantity, thus imparting a dark rich amber color and high alcohol content.

25.5 IBU / 7.2 ABV

 

This style of beer is classified as an American Brown Ale. The focus is on the malts and hops used during the brewing process. Our version comprises a complex mix of malts and is moderately hopped. The aroma and flavor is malty and roasty. It ends with a mild hop finish.

35 IBU / 7.4 ABV

 

The beer formally known as "Nebula", is a Belgian-Style dark IPA. The focus is not only on the yeast used during the brewing process, but also on the hops and dark grains. The yeast imparts a fruity and spicy flavor/aroma to the beer, followed by a sharp bite from the hops, then late in the finish you enjoy the flavor of the dark grains. Our version has no added fruit or spice.

53 IBU / 6.9 ABV

 

This style of beer is classified in the "Fruit Beer" category. The focus is obviously on the fruit used in the brewing process. The aroma is of "fresh picked peaches", but the taste is only lightly-laced with peaches.

15 IBU / 6.8 ABV

 

14.2 IBU / 7.2 ABV

 

This style of beer is classified as an American Pale Ale or APA. The focus is obviously on the hops and grain used during the brewing process. Our version uses a considerable amount of rye grain (30%) and a considerable amount of hops. The color is rich and the taste is flavorful with very firm bitterness.

56 IBU / 7.0 ABV

 

This style of beer is classified as a Foreign-Style Stout. The focus is on the roasted malts used during the brewing process. Our version uses several of these dark and flavorful malts, thus the color is dark and dense and the taste is robust and hearty.  

35 IBU / 5.7 ABV

 

This style of beer is classified in the "American India Pale Ale" category. The focus is obviously on the hops used during the brewing process. Our version is brewed with 6 malts, 4 hops, tangerine peel, and blood orange. It has a citrus/fruity aroma with a big fruit taste and a slightly bitter hop finish. Perfect and refreshing for a hot summer day.
