Oriental Pork
     
1 ½ lbs pork loin cut into large cubes   ½ cup soy sauce
1 butternut squash, peeled and cut into small cubes   1 tablespoon minced garlic
1 onion finely chopped   1 – 2 teaspoons red pepper flakes (depending on desired heat)
1 cup of Maple Amber Ale (which is available in April or you can use any non-hoppy beer of your choice)   1 tablespoon corn starch
½ cup pure maple syrup    
   

Add pork and squash cubes to crock-pot. Combine onion, beer, syrup, soy sauce, garlic pepper flakes and cornstarch. Stir well and add to crock-pot. Cook on low the entire time you are at work and serve over a bed of fluffy white rice. (The squash cooks down and becomes a part of the sauce, adding an intensity of color)
