Welsh Rabbit (Rarebit)
1 pkg. Sharp Cheddar Cheese - shredded   12 oz. Hot-Jala-Heim Beer with Bite or (1 can domestic beer (Coors, Bud, Miller, etc.)
1 tsp. mustard (yellow or dijon)   1/4 tsp. cayenne
1 diced jalapeno pepper (seeds & membranes removed if less heat is desired)   1/4 tsp. paprika
Salt & Pepper to taste    

Heat beer in a pan until hot, but not boiling

Add shredded sharp cheddar cheese and spices

Stir until melted and remove from heat (DO NOT BOIL)

Serve over toast
